If onions are cut too
thinly or baked for too long they will burn
and make your pizza sweet or bitter instead
of hot.
For this reason you will not find onion rings on a Piero's-pizza, but only diced
onions with a border length of 1/2”.
Each diced piece consists of several onion
pieces. For a single pizza you will only
need approximately 1/2 oz. diced red onions.
This equals approximately 1/2 small red onion.
Onions quickly
change their flavor when you
heat them. If you heat them too
long, they will easily burn. If
you dice your onions, the
outside of the diced pieces will
still change its flavor, but the
inside will preserve the onion
flavor. If the pieces are fairly
large, the onion will also
preserve its heat. This is
impossible to achieve with onion
rings or small pieces of onion.
Red onions have a
mild flavor compared to white
onions. On a Piero's pizza they
also add a touch of color. White
onions are not a visual contrast
to the light cheese. For a
Piero's pizza it is very
important that you can not only
taste but also see all
ingredients separately. Only
then does every mouthful create
the unsurpassed and
mouth-watering Piero's pizza
feeling.
